Strawberry Mousse

2 packages unflavored gelatin

1/2 cold water

2 cups Strawberry Puree

3/4 cup granulated sugar

2 tablespoons lemon juice

2 cups Whipped Cream (whipped to soft peaks)

Place the gelatin and water in a medium sauce pan and allow the gelatin to soften. Slowly heat the mixture until the gelatin has dissolved, stirring constantly.

Add the Strawberry Puree and sugar to the gelatin, mix over a very low heat until the sugar is dissolved. Remove from heat, add the lemon juice and allow to cool to room temperature.

Whip the cream to soft peaks. Gently fold the Strawberry mixture into the whipped cream. Place in the refrigerator until ready to use.

Note: Cool Whip can be substituted for the whipped cream.
