Was really happy with the cake but thought it needed some sparkle so I added sanding sugar. Now, I think it looks blotchy. Nothing I can do about it but it won't happen again, that's for sure.

Texas Pecan cupcakes
Found this recipe on the web. Thought it sounded good and there were several positive comments. Well, they were the driest cupcakes I have ever eaten, much like a dry shortbread. I want to play with the recipe and see if it can be made into a nicer texture. The flavor is nice but...
